乾煸肉碎四季豆 Sauteed Spring Beans with Minced Pork
家常料理中,有不少簡單的鑊氣小炒,Oreo示範將四季豆、蝦米及㰖菜等同炒,適合下飯或伴麵。
分量:2人份 需時:30分鐘
材料:
四季豆
免治豬肉
欖菜
蝦米 2湯匙
薑蓉
蒜蓉
油 適量
免治豬肉醃料:
生抽 1湯匙
鹽 1茶匙
胡椒粉 1茶匙
調味料:
豆瓣醬 1湯匙
生抽 1湯匙
紹興酒 1湯匙
鎮江醋 1茶匙
糖 2茶匙
Ingredients:
Green beans
Minced pork
Olive pickles
Dried shrimps 2 tbsp
Minced ginger
Minced garlic
Oil some
Marinade for minced pork:
Light soy sauce 1 tbsp
Salt 1 tsp
Grounded pepper powder 1 tsp
Seasoning:
Toban chilli bean paste 1 tbsp
Light soy sauce 1 tbsp
Shaoxing wine 1 tbsp
Zhenjiang vinegar 1 tsp
Sugar 2 tsp
做法:
1. 蝦米浸水15分鐘。
Soak the dried shrimps in water for 15 minutes.
2. 免治豬肉用醃料醃15分鐘。
Marinate the minced pork for 15 minutes.
3. 四季豆洗淨,摘去頭尾後切段。
Rinse the green beans, cut out the ends, then cut into sections.
4. 鑊內燒熱油,四季豆炒至表面起皺,撈起瀝乾。
Heat oil in a pan. Stir-fry the green beans until the surface is shrivelled, remove and drain the excess oil.
5. 鑊內燒熱油,爆香薑蓉、蒜蓉和蝦米,加豆瓣醬。
Heat oil in a pan. Saute the minced ginger, garlic and dried shrimps until fragrant. Add the bean paste.
6. 加免治豬肉後灒酒,炒至熟透。
Add in minced pork and drizzle with wine, fry the pork until done.
7. 四季豆回鑊,加欖菜、生抽、醋和糖。
Return the green beans to the pan. Add in olive pickles, light soy sauce, vinegar and sugar.
8. 炒勻後上碟。
Stir well and dish up.
小貼士:四季豆要煮至熟透,否則產生毒素影響身體。
Green beans must be fully cooked to avoid taking in toxins of uncooked beans.
